Its dense and sticky texture when kneaded makes it a great binder in baked goods (like vegan patties or breads). Yet, when thinned with soda water, it turns into an ultralight batter, perfect for crisp frying — much like tempura. It can also be used as a natural thickener for sauces and stews.
